Baking can sometimes feel like a precise science, especially when you're used to traditional ingredients. But fear not! We're here to show you just how easy and fun it is to swap out common animal products for equally (if not more!) amazing vegan alternatives. Let's dive in!


The Incredible Egg-scape!


Eggs play many roles in baking: binding ingredients, adding moisture, and helping things rise. The good news? There are fantastic vegan substitutes for every job!


Flax Eggs: The Mighty Seed Solution


Our absolute favourite for binding is the humble flax egg. It’s super easy to make and works wonders in cookies, muffins, and quick breads.

To make one flax egg, simply combine:

  • 1 tablespoon of ground flaxseed meal

  • 3 tablespoons of water

Whisk them together and let the mixture sit for about 5-10 minutes. You'll notice it transform into a gel-like consistency – that's your vegan egg ready to rock! The mucilage in the flaxseed provides the binding power you need.


Applesauce: The Moisture Marvel


Ah, applesauce! This unsung hero is brilliant for adding moisture and can even act as a binder in some recipes, especially those that call for a lot of eggs.

At Whispering Vegan, we even make our own unsweetened applesauce, which you can purchase directly from us! But don't worry, any unsweetened vegan applesauce will do the trick.

How to use applesauce:

  • For moisture: Replace oil or butter with an equal amount of applesauce (e.g., if a recipe calls for 1/2 cup of oil, use 1/2 cup of applesauce). This works wonderfully in cakes, brownies, and muffins.

  • For binding (especially for one or two eggs): Use 1/4 cup of applesauce per egg.

  • For fat reduction: Applesauce is a fantastic way to reduce the fat content in your baked goods while keeping them moist and delicious.


Other Egg-cellent Substitutes:


  • Mashed Banana: About 1/4 cup of mashed ripe banana can replace one egg, adding moisture and a subtle sweetness. Great for muffins, quick breads, and pancakes.

  • Silken Tofu: 1/4 cup of blended silken tofu per egg works well as a binder in denser bakes like cheesecakes or quiches. It's relatively neutral in flavour.

  • Vegan Yogurt: About 1/4 cup of unsweetened vegan yogurt (like soy or almond) can add moisture and binding.

Butter Me Up, Vegan Style!


Butter is crucial for richness, flakiness, and flavour. Luckily, the vegan world has delivered some incredible plant-based butter alternatives!

At Whispering Vegan, we love using Flora Plant Bake, which performs beautifully in all our creations. However, many other fantastic plant-based butter brands are available, often found right next to traditional butter in your local supermarket.

What to look for:

  • Stick form: For most baking, especially when creaming with sugar or cutting into flour, a stick or block-style vegan butter works best.

  • Good for baking: Many brands explicitly state "great for baking" or "baking sticks" on their packaging.

How to use it:

Simply use a 1:1 ratio! If a recipe calls for 1 cup of dairy butter, use 1 cup of vegan plant butter. It creams beautifully and will give you that familiar richness and texture.

Mooving On to Plant Milks!


This is probably the easiest swap of all! Most recipes that call for dairy milk can seamlessly use any plant-based milk.

Popular choices include:

  • Soy Milk: A classic for baking, it's rich and creamy, making it excellent for cakes, custards, and sauces.

  • Almond Milk: Lighter in texture, but still very versatile. Great for muffins, quick breads, and lighter cakes.

  • Oat Milk: Becoming increasingly popular, oat milk offers a lovely creaminess without being too heavy, excellent in most baking applications.

  • Cashew Milk: Very creamy and rich, perfect for richer desserts or anything requiring a luxurious texture.

  • Coconut Milk (from a carton): Use the carton variety for general baking, not the canned, full-fat kind unless specified for a very rich product like a ganache or whipped cream.

How to use it:

Again, it's a simple 1:1 swap! If your recipe needs 1 cup of dairy milk, use 1 cup of your preferred plant milk. Just make sure it's unsweetened unless the recipe specifically calls for sweetened milk.

Unlocking Even More Vegan Baking Magic!


Beyond the big three, here are a few other common ingredients and their fantastic vegan counterparts:

  • Sweeteners: Most sugar is naturally vegan, but some brands process sugar with bone char. Look for explicitly "vegan" sugar or use unrefined sugars like coconut sugar, maple syrup, agave nectar, or date sugar.

  • Thickeners: Cornstarch and arrowroot powder are fantastic for thickening sauces, gravies, and pie fillings. Use 1 tablespoon of cornstarch (mixed with a little cold liquid first) per cup of liquid for thickening.

  • Whipped Cream: Canned full-fat coconut milk (chilled overnight and just using the thick cream on top), vegan whipping cream (often made from soy or oats), or even aquafaba (the liquid from a can of chickpeas!) can be whipped into a fluffy topping.

  • Chocolate: Look for dark chocolate that is clearly labelled "dairy-free" or "vegan." Many high-quality dark chocolates are naturally vegan. Vegan chocolate chips are also widely available.

  • Buttermilk: To make vegan buttermilk, simply add 1 tablespoon of apple cider vinegar or lemon juice to 1 cup of plant milk (soy or almond work best) and let it sit for 5-10 minutes until it slightly curdles. This adds a lovely tang and helps with leavening.
